I couldn’t believe my good luck. Yvonne from My Halal Kitchen invited me and a few friends to have brunch at her country home. We’ve been professional colleagues for a few years in the Halal industry, but our relationship had evolved as we found increasing similarities and interests in our lives. We are both teachers too! Yet, I was a bit of a groupie thinking that I was actually going to see the kitchen where Yvonne does all her creative genius!
The day had come, and I wanted to bring a dessert for the engagement; but typical of me, I was not too swift at planning in advance. I didn’t have much to pull from in my cupboards. Then I summoned my wits to find a solution, took stock of my resources, and voila! The following is my concoction which Yvonne and company said would be useful to many as a quick, easy, and delicious solution to the “I’m running late but need to make a dessert conundrum.” Here is my humble offering…
You will need graham crackers, cream cheese, maple syrup, cinnamon, milk, coffee creamer, and granola to use for topping.
Crush the graham crackers so you have a half a cup’s worth.
Spoon an even amount of graham cracker crumbs into each of the four ramekins. Using a food processor, mix together the cream cheese, milk, vanilla, maple syrup, and cinnamon until you get a smooth, creamy mixture.
Put an even amount of the creamy mixture over the crumbs in each ramekin. Top it with a spoonful of granola for texture. Serve chilled and enjoy!


- 2 graham crackers, crushed or ½ cup graham cracker crumbs
- 1 8-oz package of cream cheese or Neufchâtel cheese
- ¼ cup milk
- 1 tbsp vanilla coffee creamer or non-alcohol vanilla
- ¼ cup real maple syrup
- 1/8 tspn cinnamon
- 1 tbsp granola per serving as a topping
- Spoon graham cracker crumbs into 4 ramekins to form a base layer.
- Use a food processor to mix cheese, milk, vanilla, maple syrup, and cinnamon.
- Spoon the mixture evenly over the crumbs in each ramekin.
- Top with a bit of granola on each for texture.
- Serve chilled.
